I know shrimp rolls probably aren’t the first thing you think of in September. However, a decade ago this month, Kevin, Keira and I took a vacation to Philadelphia, Boston and Maine. It was Kevin’s first sabbatical after 10 years of working at his company (he just took his second sabbatical this spring) and we were determined to travel. Keira was just 1 at the time. Now she’s 11 and has just started middle school. It seemed like the perfect time to make a recipe celebrating our trip there and I’m hopeful that one day soon we will make it back.

Seafood for landlocked people

As you may know, the East Coast is famous for its Lobster Rolls. However, I live in the middle of the country and not only can seafood be difficult to get, but it can also be expensive. I decided to make a spoof on the famous Lobster Rolls with this East Coast Shrimp Rolls recipe.

We have one fish market in town and hey don’t open until 11 and they close at 4, which is fairly inconvenient for pretty much everyone. So we often get flash frozen seafood. In this recipe I used the Argentinian Red Shrimp from Omaha Steaks. Flash frozen seafood is frozen within 24 hours and is better tasting than the frozen seafood at the supermarket because of this. If we can’t get something fresh, flash frozen is my next best option.

Making my East Coast Shrimp Rolls recipe

To make this recipe I start by prepping the mayonnaise mix. It’s easy to throw together once everything is chopped and measured. The recipe moves pretty fast once the shrimp are cooking. There are a number of ingredients in the mayo dressing mix, but I promise they are all important. You can even make and mix this the night before for lunch the next day or the morning before for dinner.

Once I have the dressing mixed, I set it aside and boil the water. I add a little lemon and salt to the water to help to begin flavoring the shrimp. It takes only 2-3 minutes to cook the shrimp so make sure you have the ice bath ready to go too. Once the shrimp are done boiling, I use a slotted spoon and immediately put them into the ice bath. This stops the cooking process so you don’t end up with over cooked shrimp.

I leave the shrimp in the ice bath while prepping the hotdog buns, adding butter to the insides and top before broiling. Once the buns are done, I remove the shrimp from the ice bath and strain them. Then I chop them and mix them with the mayo dressing.

Tips for making my East Coast Shrimp Rolls recipe

  • If you are going to use fresh shrimp from the seafood market, please make sure to peel, wash and clean them well. Make sure to remove the whole peel, the tail too, and remove vein running down the back of the shrimp. Do not use warm water as that will begin to cook the shrimp. If you need to use any water make sure it is cold.
  • Using flash frozen shrimp that has already been cleaned or even fresh shrimp from the market that has already been cleaned makes this Easy Coast Shrimp Rolls recipe fly by.
  • Make sure to have that ice bath ready to go when you put the shrimp into the boiling water. they go directly from boiling into the ice. I keep the bowl on the counter right next to the burner when I put the shrimp in.
  • Please use fresh herbs in this recipe where they are called for. I know that they can be more costly if you don’t grow them but fresh herbs always make a huge difference in the end flavor profile.
  • If you have leftovers, store the shrimp mix separately from the hot dog buns. It will keep for up to two days in an air tight container in the refrigerator. Discard after two days.

Equipment

Ingredients

For the shrimp

  • 2 tsp sea salt
  • Juice from half a lemon
  • Large pot of boiling water
  • 2 lbs shrimp, cleaned with tails and veins removed
  • Ice bath

Ingredients for the Hot Dog Buns

  • 8 hot dog buns
  • 1 tsp butter per bun

For the dressing mix

  • 1 cup mayonnaise
  • 1 cup diced celery
  • 1/2 cup chopped green onions (Bottoms)
  • 1/3 cup chopped dill
  • 1/4 cup chopped chives
  • 1/4 cup chopped parsley
  • 2 tsp chopped capers
  • 2 Tbsp Dijon mustard
  • 1 Tbsp red wine vinegar
  • Zest of 1 lemon
  • 4 cloves garlic, grated or pressed
  • 1 tsp paprika
  • 1/2 tsp garlic salt
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • Fresh Cracked Pepper

Instructions

  • Boil a large pot of water over a medium to high flame with 2 tsp of sea salt and juice from half the lemon.

  • While waiting for it to boil, mix the mayonnaise dressing ingredients together in a medium sized bowl.

  • Once the water is boiling add the shrimp for 2-3 minutes and then immediately remove and add them to the ice bath stop the cooking process.

  • Butter then buns on the inside and on the top. Broil them for 1-2 minutes. Make sure to keep an eye on them because they can burn just going 30 seconds too long.

  • Remove the shrimp from the ice bath and chop. Add it to the mayo mix and combine. Then stuff the hot dog buns.

  • Top with an additional squeeze of lemon juice, sea salt, pepper and parsley.
