Every year, I make a ton of New Year’s resolutions that I end up forgetting about within a few days. Like most people, I resolve to spend more time working out, drink more water, stress less, sleep better, and so on. This year, though, I’m switching gears and making resolutions that I know I’ll actually want to stick to! One of those goals is to spend more time cooking with my daughter, and the Taste of Home 100 Family Meals cookbook is the perfect tool to help me do just that! After all, research shows thateating together as a family helps reduce stress (not to mention it helps ensure we’re all eating healthier).

Since I was a little girl, cooking has been very close to my heart. My aunt has always owned a bakery that I helped at and my mom was always in the kitchen, as was my grandmother. Food was always a big part of family gatherings and you never left hungry. When I was ten, I was so obsessed with cooking that my parents bought me a waffle iron for Christmas. It was my favorite gift out of all of them. A couple years down the road, my mother surprised me with tickets to go see a cooking show.

That cooking show was the Taste of Home show and I was mesmerized. I was young and new to all the cooking gadgets. There were a ton of booths, cooking demonstrations, and tastings of recipes from their featured recipes. I was hooked and Taste of Home quickly became my favorite and most trusted source for recipes. When I received their cookbook, it made me feel nostalgic. I thought about all those magazines I saved of theirs and how much I cherished them.

The cookbook contained so many recipes (enough to make a new meal twice a week!) ranging from easy to a little more time-consuming. I adored the little notes added in by those who had created the recipe and the bright, beautiful photos made it difficult to choose which recipe to make. I sat and read through the recipes for a good half an hour until my husband asked me if I was going to stare at it all day.

  1. In a large bowl, beat the pancake mix, dry pudding mix, butter and egg until blended. Stir in pecans.
  2. Roll into 1 ½ in. balls. Place 2 in. apart on greased baking sheets. Flatten with the bottom of a glass. Bale at 350 degrees for 8-10 minutes or until edges begin to brown. Remove to wire racks to cool.

Note: you may substitute regular biscuit/baking mix for the complete buttermilk pancake mix.

How easy is that? I never thought of using pancake mix to make cookies before, did you? This is just one of the little tricks you’ll learn as you read through Taste of Home 100 Family Meals. That’s not all, either. The book is filled not just with recipes but also with fun ways to really savor your family mealtime, like the chapter called Table Talk, which gives you fun discussion topics! Many of the recipes are easy enough to allow your own little ones to help out, too!
